Chia seeds, a healthy source of antioxidants, omega 3 and fiber

As most of you know, I spend most of my time doing what brings me the most joy.  I absolutely love guiding people on how to live a healthy and holistic life, but I believe that a life without health, is a life without joy, so it all starts with being healthy.I can say that the foundation for a happy life is health. A happy gut, nutrient rich foods, and conscious daily rituals all contribute to a thriving life.Chia is one of the foods that are on top of my list and this seed is super easy to include in your daily life.I love this superfoodbecause of how nutritious it is and how easy it is to prepare and store. If I ever feel a drop in energy or blood sugar (on or off The 40 Day Green Cleanse) I will take a shot of Chia Gel.O.K. so some of you dislike the texture? I have a quick solution for you; If you are making a soup, juice, or shake just blend up the Chia Gel and throw it in your drink or meal. Chia Gel has no flavor; however, it can magnify the taste of most dishes all the while giving your body all it's benefits.

Chia Gel

1 part Chia seeds 9 parts waterI put the above ingredients in a glass jar and shake the mixture up a few times to keep the gel from clumping. Soak them overnight for best results- but at least for 1 hour. The gel keeps for 10 days in the refrigerator.

Vegan Egg Substitute

To substitute for an egg:1 tablespoon finely ground chia seeds 3 tablespoons of water per eggStart with grinding the chia seeds in a blender, coffee grinder, Vitamix, or food processor. Don't blend them too long or it makes a butter.  Add the water and soak for a minimum of 20 minutes.  Add to your recipe.They are perfect in a baked recipe or soup.
